Ade Hill of Mendip Living, asks Lucy Cooper on The Three Swans, Frome, a few questions…

Congratulations Lucy! How does it feel to be one of the youngest Landladys of one of the oldest pubs in Frome? 

I feel very lucky to have been given such an amazing opportunity to be my own boss at such a young age, as the manager of one of the busiest pubs in Frome. My business partner Christopher Moss owns the pub and is responsible for the beautiful interior and all of the antiques and collectables that you can find inside. This is one of the reasons I fell in love with the place. It’s quirky, unique and I feel very privileged to currently call it my home. 

Three Swans FromeHow long have you been working at The Three Swans? 

I have been working at The Three Swans for just over 4 years now. I started in May 2014 at the age of 18, whilst completing my A-levels. It was my first ever pub job and I was terrified! It can feel overwhelming to have all eyes on you, but once I’d gotten to know the regulars and began having a laugh with them, everything else just fell into place. It has felt like a second-home ever since and I’m very proud to have taken over the reins. 

Did you ever think you would be taking over the reins one day? 

Honestly… no. After the first couple of times of running the pub for my old boss, I really enjoyed it, became Assistant Manager, and started to think about managing a pub somewhere else as there were no rungs on the career ladder left to climb. In February 2018, I handed in my notice and was ready to take the step out of my comfort zone and try to find a pub to manage. As it turned out, my boss was ready to move on in a change of career, and so Chris offered the management of The Three Swans to me. It was a complete U-turn on my plans, but I’m very proud and very happy to be managing the pub, with the same team in exactly the same way as we always have done. 

What plans do you have regarding food? 

We hope to have our roast dinners up and running again in the near future, as well as possibly starting light lunches on a Friday and Saturday lunchtimes too. We would hopefully serve lunches upstairs from 12 midday – 3pm Fridays and Saturdays, and then roast dinners in set sittings at 12:30pm and 2:30pm on Sundays. Keep an eye out for this! Also, we have started to advertise for pop-up kitchens to come in and take over for the evening. With only a small fee, they can come in and run a kitchen all of their own, using the function room as their restaurant.
